silky dark chocolate pie

This was my first attempt at a chocolate pie and I’m not sure I did it right because it was very thin and runny.  More like pudding. Oh well, I’d love to make this again however, because it sure was delicious! Here’s what I did (recipe adapted from taste of home)

Ingredients: 1/3 C sugar// 1/4 C cornstarch// 2/1/2 C half and half// 4 egg yolks// 6 oz dark chocolate finely grated or chopped// 3 Tbs brandy// 1 tsp vanilla extract//

topping: 1 C heavy whipping cream// 1 Tbs brandy// 1 tsp confectioner’s sugar// baking cocoa

1. Make your crust. I used a frozen crust and just followed the directions. 2. In a heavy saucepan, mix the sugar and cornstarch; whisk in cream. cook and stir over med. heat until thick and bubbly. remove from heat.  In a small bowl whisk the hot mix into the egg yolk and return to the pan. cook over low heat for about a minute more. Remove from heat again and add the chocolate flakes, brandy and vanilla.

2.  Transfer your mix to a clean bowl and press plastic wrap onto the surface until it is room temp.  Pour the mix into the pie crust and refrigerate until cold.

3. To make the topping beat the cream until it begins to thicken. Add brandy and sugar and beat it until peaks form.  Top your pie with the whipped cream and sprinkle cocoa on top.

This would be super yummy for Valentines day!
